Our Story

We bake for the
long way round.

Calibrate 49 started from a simple conviction: bread should take as long as it takes. Not an hour. Not two. A full, patient fermentation that develops flavor no shortcut can replicate.

We opened our doors on Florida Avenue in East Nashville because this neighborhood values craft over convenience. Our bakers arrive before dawn. Our flour is stone-milled. Our butter is cultured. We measure success not in units sold but in the regulars who show up knowing exactly what we'll have that day.

Beyond the bakery case, we curate a small selection of groceries — olive oils, preserved foods, local honey, specialty salts — each chosen because we'd use it in our own kitchen.

What We Make

Levain

Our signature sourdough, fermented 48 hours. Thick crackling crust, open and irregular crumb. Baked at dawn, sold by afternoon.

Daily — limited quantity

Viennoiserie

Butter croissants, pain au chocolat, brioche — laminated by hand each morning. Flaky, rich, properly layered.

Morning only

Pastries

Tarts, galettes, and seasonal fruit compotes. Simple presentations, honest fruit, pastry cream made from scratch.

Rotates with the season

Savory

Quiches, savory tarts, focaccia with rosemary and sea salt. Made for lunch, meant for sharing.

Cookies & Bars

Brown butter chocolate chip, sea salt caramel, matcha white chocolate. Always fresh, never frozen, never rushed.

While supplies last

Grocery

Olive oils, vinegars, preserved foods, local honey, specialty salts, and pantry staples we'd use at home. Small selection, intentional curation.

Our Philosophy

Slow by
choice,
not by accident.

We don't rush. Our sourdough ferments for two full days. Our doughs rest overnight in the fridge. We use flour milled within the region and butter from dairies we know by name.

The grocery side of the shop is an extension of the same idea: products worth keeping on hand, sourced from makers who share our commitment to quality over quantity.

If something isn't worth making properly, we don't make it at all.
